The ultimate peppermint brownies

These peppermint brownies are definitely an all-time favorite of mine. The brownie is rich, chewy, and perfectly cooked throughout.

I really am picky about brownies. I don't want nuts in them and I want them to be less cake-like. This recipe really does the trick. You have the chewy edges but you also get the perfect amount of gooey insides.

Peppermint brownies from scratch

I know you can purchase brownie mix from the store. They're great and all but really, it's super simple to make them from scratch. They'll taste so much better without the added preservatives.

How much peppermint extract do you add to the brownie mix?

We are only using 1 teaspoon of peppermint extract because we are adding candy canes to the top of our brownies. You can always choose to not use candy canes therefore, you would want to increase your peppermint to 2 teaspoons.

The Peppermint brownies Ingredients

  • 2 sticks of melted butter
  • 2 ½ cups Sugar
  • 1 ½ cups Cocoa powder
  • 1 teaspoon Salt
  • 4 Eggs
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Peppermint extract
  • ⅔ cups Flour
  • 2 Crushed candy canes

How to make peppermint brownies

  1. Preheat oven to 350 degrees.
  2. Beat eggs & sugar until frothy.
  3. Add cocoa, salt, vanilla, peppermint, and mix.
  4. Add in eggs.
  5. Fold in flour just until incorporated. Be careful not to overmix.
  6. Grease and flour pan or use pan spray and parchment paper.
  7. Bake 20 minutes, add candy canes and continue baking for an additional 10-25 minutes or until a toothpick comes out clean.
  8. Let cool 30 minutes before cutting.

Helpful Hints

  1. The batter is going to be thick, unlike normal batter. Use the spatula to press down on the batter to get it to the edges of your pan. Smooth out the batter as best you can. Once it begins to cook, it will start evening out.
  2. If you want a brownie with peppermint frosting, omit the candy canes and add 1 teaspoon of peppermint to whatever frosting you would like to use.
  3. For storage, place the peppermint brownies in an airtight container at room temperature for up to 7 days.

  • 1 ½ cups cocoa powder
  • 1 teaspoon kosher salt
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract
  • ⅔ cups all-purpose flour
  • 2 candy canes, crushed

Instructions

  • Preheat oven to 350 degrees.
  • Beat eggs & sugar until frothy.
  • Add cocoa, salt, vanilla, peppermint, and mix.
  • Add in eggs.
  • Fold in flour just until incorporated. Be careful not to overmix.
  • Grease and flour pan or use pan spray and parchment paper.
  • Bake 20 minutes, add candy canes and continue baking for an additional 10-25 minutes or until a toothpick comes out clean.
  • Let cool 30 minutes before cutting.

Notes

  1. The batter will be thick and a little difficult to spread. I recommend pressing down the batter as best you can. Once you have the batter to the edges of the pan, you can smooth out any high peaks.
