    The Perfect Slow Cooker Pot Roast

    Cooking a pot roast is one of those great one-pot meals that take very little prep time. It's not difficult to learn how to cook a pot roast either. With just some simple ingredients and some time, you can have a complete family meal made by dinner time. Just don't forget to make that wonderful pot roast gravy from your homemade beef broth.

    A lot of people ask what cut of meat is pot roast. A perfect pot roast recipe utilizes the tougher cuts of meat. Some of those are fattier than others but they all make a tasty pot roast.

    I like to slow cook my roasts until they are fall-apart tender. Any leftovers can easily be converted into a beef stew for a hearty lunch.

    🍽 Equipment

    This is a slow cooker recipe but if you prefer the oven method, you can use any oven safe roasting pan such as a Dutch oven or even a stockpot with a lid. Your best bet would be a cooking vessel that is cast iron because of the even cooking it offers. If you have an instant pot, you could use that and have a slow cooked roast in even less time.

    Slow cooker recipes are one of my favorites even though I don't use them in the restaurant. You can put it on low and let it go all day while you're working on other things.

    No matter what you choose to braise and stew your food, remember to put it on low and roast slow.

    🥣 Food preparation

    When preparing your roast, make sure you pat it dry, salt and pepper it liberally, and make sure it is browned on all sides, even the ends.

    The real question is going to be whether or not you want to peel the carrots and potatoes. I go either way on this one. Sometimes I peel them but most of the time, I don't because I like the rustic look and taste of the vegetables. Of course, it comes to personal preference. As you will see from this particular easy slow cooker pot roast recipe, I didn't state to peel the carrots

    🥘 Ingredients

    Pot Roast

    • 3 pounds Sirloin Tip Roast
    • 2 tablespoons canola oil
    • 4 each carrot cut into 1-inch pieces
    • 4 medium celery cut into 1-inch pieces
    • 1 large onion halved and quartered
    • 4 medium potatoes, peeled, halved and quartered
    • 4 cloves garlic chopped
    • 2 bay leaf
    • 1 teaspoon Italian seasoning
    • kosher salt to taste
    • ground black pepper to taste

    Gravy

    • 2 tablespoons unsalted butter
    • 2 tablespoons all-purpose flour
    • kosher salt to taste
    • ground black pepper to taste

    🔪 Instructions

    Pot Roast

    1. Heat oil in a cast-iron skillet.
    2. Pat dry roast. Generously salt and pepper the roast.
    3. Brown the roast on all sides and transfer meat to the slow cooker.
    4. Deglaze the skillet with water. Scrape skillet to release the fond from the pan. Add the liquid from the pan into the slow cooker with the roast.
    5. Add carrots, onion, celery, garlic, Italian seasoning, and bay leaf to the slow cooker.
    6. Pour cold water over the roast and vegetables, enough to cover plus an additional 2 inches.
    7. Turn the slow cooker on low and cook for 7 hours.
    8. Add potatoes and adjust seasoning and cook for another hour.
    9. The roast is cooked and finished when it is fork-tender. Transfer roast from the slow cooker and allow to rest under a foil tent for 15 minutes.

    Gravy

    1. In a clean skillet, take 2 tablespoons of butter and melt over medium-high heat. Add in 2 tablespoons of flour and make a roux. Cook for about 1 to 2 minutes.
    2. Whisk in 2 cups of pot roast liquid and bring to a boil, about 4 minutes. Adjust seasoning and serve.

    💭 Helpful Hints

    • What is the best roast for pot roast? You can use any type of beef roast such as chuck roast, top round, or bottom round.
    • Cooking time may vary depending on the type and size of the roast.
